  • 3/4 cup (90g) walnuts, toasted in brown butter
  • 1/2 cup (90g) toffee chips

Instructions

  1. Brown the butter and toast walnuts: Melt unsalted butter in a light-colored skillet over medium heat, stirring constantly until golden amber with a nutty aroma (5-7 minutes). Remove from heat and stir in walnuts to coat. Set aside to cool slightly.
  2. Preheat oven to 350°F (175°C). Lightly grease a 9×5-inch loaf pan and line with parchment paper if desired.
  3. In a medium bowl, whisk together sifted flour, baking soda, and salt until combined.
  4. In a large bowl, whisk brown sugar, granulated sugar, and eggs until smooth and slightly pale.
  5. Stir in mashed bananas, vanilla extract, and the cooled browned butter walnuts (reserve any leftover browned butter).
  6. Fold dry ingredients into wet ingredients gently with a spatula until no flour streaks remain; avoid overmixing.
  7. Fold in toffee chips gently.
  8. Pour batter into prepared loaf pan and smooth the top.
  9. Bake for 55-65 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
  10. If top browns too quickly, tent with foil after 40 minutes.
  11. Cool bread in pan on a wire rack for 15 minutes, then remove from pan and cool completely before slicing.
