  • 1/2 cup (120g) creamy peanut butter
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (110g) packed light brown sugar
  • 1 large egg, room temperature
  • 1 1/2 cups (190g) all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup (50g) granulated sugar (for rolling)
  • About 36 Hershey Kisses, unwrapped

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large mixing bowl, beat together butter, peanut butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  3. Add the egg and mix well until fully incorporated. Scrape down the sides of the bowl.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the butter mixture, mixing on low speed just until combined. Dough should be soft but not sticky.
  6. Scoop tablespoon-sized balls of dough (about 20g each) and roll each ball in granulated sugar to coat.
  7. Arrange dough balls on the prepared baking sheet, spacing about 2 inches apart.
  8. Bake for 8-10 minutes, until edges are set and tops crack slightly. Cookies will still look soft in the center.
  9. Immediately after removing cookies from the oven, gently press a Hershey Kiss into the center of each cookie.
  10. Transfer cookies to a wire rack and let cool completely before storing or stacking.

Notes

Chill dough for 15-20 minutes if using natural peanut butter or if your kitchen is warm. For gluten-free, use a 1-to-1 gluten-free flour blend. Press Hershey Kisses into cookies immediately after baking for best results. Store cookies in an airtight container with a slice of bread to keep them soft. Freeze dough balls for future baking.
