  • 4 cups (1 liter) low-sodium chicken or vegetable broth
  • 6 ounces (170g) lasagna noodles, broken into 2-inch pieces
  • 1 tablespoon dried Italian seasoning (oregano, basil, thyme blend)
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • 1 cup (240g) ricotta cheese (whole milk recommended)
  • Fresh basil or parsley, for garnish

Instructions

  1. Brown the sausage: Heat a skillet over medium-high heat. Add ground Italian sausage and cook, breaking it up with a spatula, until browned and cooked through, about 5-7 minutes. Transfer to the crockpot, leaving some rendered fat behind.
  2. Sauté the aromatics: In the same skillet, add diced onion and cook until translucent, about 4 minutes. Add minced garlic and cook another 30 seconds until fragrant. Transfer to the crockpot.
  3. Add tomatoes and broth: Pour in crushed tomatoes, tomato paste, and chicken broth. Stir in dried Italian seasoning and red pepper flakes if using. Season with salt and pepper to taste.
  4. Break and add noodles: Break lasagna noodles into 2-inch pieces and stir into the crockpot mixture.
  5. Cook low and slow: Cover and cook on low for 6 hours or on high for about 3 hours. Stir gently halfway through cooking to prevent noodles from sticking. Soup should thicken and noodles become tender but not mushy.
  6. Prepare ricotta topping: Just before serving, spoon ricotta cheese into a small bowl and stir smooth or leave rustic.
  7. Serve: Ladle soup into bowls, add dollops of ricotta on top, and garnish with fresh basil or parsley.
