  • 2 cups shredded Smoked Gouda cheese
  • 2 cups heavy cream
  • 1 cup whole milk
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cloves garlic, minced
  • Pinch of nutmeg
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or cooking spray.
  2. Peel the potatoes and slice them thinly (about 1/8-inch thick). Use a mandoline slicer or a sharp knife for even slices. Place the sliced potatoes in a large mixing bowl and set aside.
  3. In a medium saucepan, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  4. Whisk in the flour and cook for another 1-2 minutes to create a roux. Be careful not to burn the mixture—it should be light golden.
  5. Gradually whisk in the milk and heavy cream, ensuring no lumps form. Cook for about 5 minutes, stirring constantly, until the mixture begins to thicken.
  6. Lower the heat and stir in the shredded Smoked Gouda cheese, one handful at a time, until fully melted and smooth. Add a pinch of nutmeg and season with salt and pepper to taste.
  7. Pour half of the cheese sauce over the potatoes in the mixing bowl. Toss gently until all slices are coated evenly.
  8. Start layering the potatoes in the prepared baking dish. Create an even layer of potatoes, then pour a portion of the remaining cheese sauce on top. Repeat until all the potatoes and sauce are used up, finishing with a layer of sauce.
  9. Cover the dish with aluminum foil and bake for 30 minutes. Then, remove the foil and bake for an additional 25-30 minutes, or until the potatoes are tender and the top is golden and bubbly.
  10. Let the dish rest for 10 minutes before serving. Garnish with fresh chopped parsley for a pop of color and flavor.
