  • 30 oz (850 g) frozen shredded hash browns
  • 3 cups (340 g) sharp cheddar cheese, shredded
  • 8 large eggs, room temperature
  • 2 cups (480 ml) whole milk
  • 1 medium onion, finely chopped
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons butter
  • Optional: 1 cup (150 g) cooked breakfast sausage or diced ham

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt the butter in a skillet over medium heat. Add the finely chopped onion and cook until translucent, about 4-5 minutes. If using sausage or ham, add it now and cook until browned and warmed through. Set aside to cool slightly.
  3. In a large bowl, whisk together the 8 large eggs and 2 cups (480 ml) of whole milk until smooth and slightly frothy. Stir in the salt and black pepper.
  4. Add the frozen shredded hash browns (no need to thaw) into the egg mixture. Then fold in the sautéed onions (and meat, if using) along with 2 ½ cups (285 g) of shredded sharp cheddar cheese. Save the remaining ½ cup (55 g) of cheddar for topping.
  5. Lightly grease your 9×13 inch (23×33 cm) baking dish with butter or non-stick spray. Pour the mixture evenly into the dish, smoothing the top with a spatula.
  6. Sprinkle the remaining ½ cup (55 g) of sharp cheddar evenly over the casserole.
  7. Place the dish in the preheated oven and bake uncovered for 45-50 minutes, or until the casserole is set and the cheese on top is bubbly and golden brown. Test doneness by inserting a knife into the center; it should come out clean.
  8. Let the casserole cool for about 10 minutes before slicing to help it set and make serving easier.

Notes

Do not thaw hash browns before mixing to avoid sogginess. Sauté onions and optional meat to remove excess moisture and add flavor. Let casserole rest 10 minutes after baking to set properly. Cover with foil if top browns too quickly. Broil last 2 minutes for crispier crust, watching closely.
