  • Caramel Glaze:
  • 1 cup (200 g) packed brown sugar
  • ½ cup (120 ml) heavy cream
  • ¼ cup (57 g) unsalted butter
  • Pinch of salt
  • ½ teaspoon vanilla extract

Instructions

  1. Reduce the Apple Cider: Pour 1 cup (240 ml) of apple cider into a medium saucepan. Bring to a simmer over medium heat and let it reduce until about ¼ cup (60 ml) remains, about 15 to 20 minutes. Set aside to cool.
  2. Preheat Oven and Prepare Pan: Heat oven to 350°F (175°C). Grease a 9-inch Bundt pan thoroughly with butter or non-stick spray and lightly dust with flour.
  3. Mix Dry Ingredients: In a large bowl, whisk together sifted flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Cream Butter and Sugars: Using an electric mixer, beat softened butter with granulated sugar and brown sugar until light and fluffy, about 3 to 4 minutes.
  5. Add Eggs and Vanilla: Beat in eggs one at a time, mixing well after each. Add vanilla extract and mix until smooth.
  6. Combine Wet and Dry: Gradually add dry ingredients to the wet mixture, alternating with the reduced apple cider, starting and ending with dry ingredients. Mix gently until just combined.
  7. Pour and Bake: Transfer batter to prepared pan and smooth the top. Bake for 40 to 45 minutes or until a toothpick inserted near the center comes out clean.
  8. Cool: Let cake cool in pan for 15 minutes, then invert onto a wire rack to cool completely.
  9. Make the Caramel Glaze: In a clean saucepan, combine brown sugar, heavy cream, butter, and salt. Bring to a gentle boil over medium heat, stirring constantly until smooth and thickened, about 3 to 5 minutes. Remove from heat and stir in vanilla extract. Let cool slightly.
  10. Glaze the Cake: Drizzle caramel glaze evenly over cooled cake. Let glaze set for about 10 minutes before slicing and serving.
