  • 3 tablespoons (42g) unsalted butter, melted
  • 2 teaspoons cinnamon
  • ½ cup (100g) packed brown sugar
  • ¼ teaspoon nutmeg (optional)
  • 1 teaspoon vanilla extract
  • 1 cup (120g) powdered sugar, sifted
  • 3 tablespoons pure maple syrup
  • 2 tablespoons milk (adjust for consistency)
  • ½ teaspoon vanilla extract

Instructions

  1. In a large bowl, combine 3 ½ cups all-purpose flour, ¼ cup granulated sugar, 2 ¼ teaspoons instant yeast, and 1 teaspoon salt. Stir to mix.
  2. Add 1 cup warmed whole milk and 4 tablespoons melted butter to the dry ingredients. Crack in 2 room-temperature eggs. Mix with a wooden spoon or stand mixer fitted with a dough hook until a rough dough forms, about 2 minutes.
  3. Knead the dough on a floured surface for 8-10 minutes until smooth and elastic, or continue mixing with the stand mixer for 6-7 minutes. The dough should be soft but not sticky. Add a tablespoon of flour if too wet, but don’t overdo it.
  4. Place the dough in a lightly greased bowl, cover with a damp towel or plastic wrap, and let it rise in a warm spot until doubled in size, about 1 to 1.5 hours.
  5. While the dough rises, peel, core, and finely dice 2 medium apples. In a bowl, combine 3 tablespoons melted butter, ½ cup packed brown sugar, 2 teaspoons cinnamon, ¼ teaspoon nutmeg (optional), and 1 teaspoon vanilla extract. Toss the diced apples in this mixture until evenly coated. Set aside.
  6. Once the dough has doubled, punch it down gently and roll it out on a floured surface into a rectangle about 12×16 inches (30×40 cm). Brush the surface with 3 tablespoons melted butter.
  7. Sprinkle the cinnamon-sugar apple filling evenly over the dough. Using a sharp knife, cut the dough into 12 equal squares, stacking them in three stacks of four.
  8. Place the stacks upright into a greased 9×5-inch loaf pan, arranging them snugly so they’ll pull apart once baked.
  9. Cover the pan and let the dough rise again for 30-40 minutes until puffy.
  10. Preheat the oven to 350°F (175°C). Bake the loaf for 35-40 minutes until golden brown and cooked through. If the top browns too quickly, tent with foil halfway through baking.
  11. Remove from the oven and let cool in the pan for 10 minutes, then transfer to a cooling rack.
  12. Whisk together 1 cup powdered sugar, 3 tablespoons pure maple syrup, 2 tablespoons milk (adjust for consistency), and ½ teaspoon vanilla extract until smooth. Drizzle generously over the warm bread.

Notes

Use warm milk at about 110°F to activate yeast properly. If dough is too wet, add flour sparingly. Tent bread with foil if browning too fast. Adjust glaze milk for desired consistency. For gluten-free, substitute flour with gluten-free blend and add xanthan gum. Vegan adaptations include plant-based milk, coconut oil, and flax eggs.
