Instructions

  1. Peel and slice about 4 cups of ripe peaches. Toss them in a bowl with 1/4 cup granulated sugar, 2 tablespoons brown sugar, 1 tablespoon lemon juice, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg (if using), and 1 tablespoon cornstarch. Let sit for 10-15 minutes to macerate.
  2. In a light-colored skillet over medium heat, melt 6 tablespoons of unsalted butter. Stir constantly until the butter foams and turns a deep amber color with nutty aroma. Remove from heat immediately.
  3. In a large bowl, whisk together 1 1/2 cups all-purpose flour, 2 tablespoons sugar, 1 teaspoon baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon salt, and 1 teaspoon cinnamon.
  4. Pour the warm brown butter into the dry ingredients and stir to coat. Add 3/4 cup cold buttermilk and stir gently until just combined. Do not overmix.
  5. Preheat oven to 375°F (190°C). Grease a 9×9-inch baking dish. Pour the peach filling evenly into the dish.
  6. Drop spoonfuls of the cinnamon biscuit dough over the peaches, covering as much surface as possible but leaving some gaps.
  7. Bake for 35-40 minutes until the biscuit crust is golden brown and the filling is bubbly. A toothpick inserted should come out clean or with moist crumbs.
  8. Let cool for at least 10 minutes before serving. Serve warm, optionally with vanilla ice cream or whipped cream.

Notes
