  • 1 cup breadcrumbs (plain or Italian seasoned)
  • 1 large egg, room temperature
  • ½ cup whole milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika (optional)
  • 12 slices bacon (thick-cut works best)
  • ⅓ cup brown sugar (light or dark)
  • ½ cup ketchup
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon hot sauce (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your loaf pan or line it with parchment paper for easier removal.
  2. In a large bowl, combine ground beef, ground pork, breadcrumbs, egg, milk, chopped onion, minced garlic, Worcestershire sauce, salt, black pepper, and smoked paprika. Mix gently until just combined, about 3-4 minutes.
  3. Transfer the mixture to your loaf pan and press it in evenly. If going freeform, shape it on a baking sheet into a rough loaf about 8 inches long.
  4. Toss bacon slices with brown sugar in a shallow dish until coated. Drape bacon slices over the meatloaf, overlapping slightly, and tuck ends underneath.
  5. In a small bowl, whisk together ketchup, apple cider vinegar, brown sugar, Dijon mustard, and hot sauce if using. Brush about half of this glaze over the bacon-wrapped meatloaf.
  6. Place the loaf pan on a baking sheet and bake for 45 minutes. Brush remaining glaze over the meatloaf and bake an additional 15-20 minutes, or until internal temperature reaches 160°F (71°C) and bacon is crisp.
  7. Let the meatloaf rest for 10 minutes before slicing to allow juices to redistribute.

Notes

Do not over-mix the meat to avoid a dense loaf. Use a meat thermometer to check doneness at 160°F. If bacon browns too quickly, tent with foil. Apply glaze twice for sticky, glossy finish. Let meatloaf rest before slicing for juicy texture.
