  • ½ teaspoon fine sea salt
  • ½ teaspoon ground cinnamon (optional)
  • ½ cup (115 g) unsalted butter, cold and cubed (use vegan butter for dairy-free)

Instructions

  1. Preheat your oven to 350°F (175°C). Butter your baking dish lightly or spray with nonstick spray.
  2. Peel, pit, and slice your peaches into about ½-inch (1.3 cm) thick slices. Place them in a large bowl.
  3. Add ¼ cup brown sugar, 1 tablespoon lemon juice, 1 teaspoon vanilla extract, 1 tablespoon cornstarch, and ¼ teaspoon cinnamon to the peaches. Toss gently to coat evenly.
  4. Transfer the peach mixture to your prepared baking dish, spreading it out evenly.
  5. In a medium bowl, combine 1 cup rolled oats, ½ cup all-purpose flour, ½ cup light brown sugar, ½ teaspoon sea salt, and ½ teaspoon cinnamon. Mix well.
  6. Cut in the cold, cubed butter using a pastry cutter, fork, or fingers until the mixture resembles coarse crumbs with some pea-sized pieces.
  7. Sprinkle the crumble evenly over the peach filling without pressing down.
