Instructions

  1. Chop the cabbage into bite-sized pieces, finely dice the onion, and mince the garlic.
  2. Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the onion and garlic, stirring until softened and fragrant (about 3-4 minutes).
  3. Add the ground beef to the pot. Break it up with a wooden spoon and cook until browned (about 5 minutes). Season with salt, pepper, and paprika.
  4. Pour in the beef broth, tomato sauce, and diced tomatoes. Stir well to combine.
  5. Stir in the chopped cabbage and let it cook down for 5 minutes—it will soften and shrink.
  6. Stir in the uncooked rice. Bring the soup to a gentle boil, then reduce the heat to low and cover. Let it simmer for 20 minutes, stirring occasionally, until the rice is tender.
  7. Taste the soup and adjust with more salt, pepper, or paprika as needed.
