  • 5 medium russet potatoes, peeled and diced
  • 1 pound ground beef, preferably lean
  • 6 slices bacon, cooked until crispy and chopped
  • 2 cups shredded sharp cheddar cheese
  • 1 medium yellow onion, finely diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup milk (whole or 2%)
  • 3 tablespoons butter
  • 3 tablespoons flour
  • Salt and pepper to taste
  • 3 stalks green onions, thinly sliced (optional garnish)
  • Sour cream for serving (optional)

Instructions

  1. Cook the bacon in a large skillet over medium heat until crispy, about 8 minutes. Remove bacon and drain on paper towels. Reserve 1 tablespoon of bacon fat in the skillet.
  2. Add ground beef to the skillet with reserved bacon fat. Cook over medium-high heat, breaking into crumbles, until browned and no longer pink, about 6-8 minutes. Season with salt and pepper. Transfer beef to a plate and set aside.
  3. In a large pot or Dutch oven, melt butter over medium heat. Add diced onion and cook until translucent, about 4 minutes. Stir in minced garlic and cook for 30 seconds until fragrant.
  4. Sprinkle flour over onions and garlic, stirring constantly for 2 minutes to cook out raw flour taste.
  5. Gradually whisk in chicken broth and milk to avoid lumps. Add diced potatoes and bring to a gentle boil. Reduce heat to low and simmer until potatoes are tender, about 15-20 minutes.
  6. Use a potato masher or immersion blender to mash about half the potatoes in the pot, thickening the soup while keeping some chunks.
  7. Return cooked ground beef to the pot and stir in shredded cheddar cheese until melted and combined. Adjust salt and pepper to taste.
  8. Crumble cooked bacon and stir half into the soup. Reserve the rest for topping. Add sliced green onions if desired.
  9. Ladle soup into bowls, top with remaining bacon and a dollop of sour cream if desired.

If the soup gets too thick, add a splash of broth or milk to loosen it. Letting the soup sit for 10 minutes before serving helps flavors meld.
