  • 1 teaspoon salt

  • 2 tablespoons cold unsalted butter, cut into small cubes
  • 1 1/4 cups buttermilk (or whole milk with 1 tablespoon lemon juice, stirred and rested for 5 minutes)

Instructions

  1. In a large pot or Dutch oven, melt 2 tablespoons of butter over medium heat. Add diced onions, carrots, and celery. Sauté for 5-7 minutes until softened and fragrant.
  2. Stir in minced garlic and thyme. Cook for another minute until garlic is aromatic, being careful not to burn it.
  3. Add 6 cups chicken broth, bring to a gentle simmer. Season with salt and pepper to taste. Let simmer for 10 minutes to meld flavors.
  4. While broth simmers, shred cooked chicken into bite-sized pieces and set aside.
  5. In a mixing bowl, whisk together flour, baking powder, salt, and pepper. Add cold butter cubes and mix with fingers or pastry cutter until mixture resembles coarse crumbs.
  6. Pour in buttermilk and stir gently just until dough comes together. Dough will be slightly sticky; do not overmix.
