  • ¾ cup (180 ml) whole milk (or almond milk for dairy-free)
  • 1 teaspoon vanilla extract
  • 6 tablespoons (85 grams) unsalted butter, melted (for cinnamon swirl)
  • ½ cup (100 grams) packed brown sugar (for cinnamon swirl)
  • 2 tablespoons ground cinnamon (for cinnamon swirl)
  • Pinch of nutmeg or cardamom (optional, for cinnamon swirl)
  • 1 cup (120 grams) powdered sugar (for glaze, optional)
  • 23 tablespoons (3045 ml) milk (for glaze, optional)
  • ½ teaspoon vanilla extract (for glaze, optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch pan or line it with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. In a separate bowl, whisk melted butter with granulated sugar until combined. Add eggs, milk, and vanilla extract; whisk until smooth.
  4. Gradually pour wet ingredients into dry ingredients, stirring gently until just combined. Batter should be thick but pourable.
  5. In a small bowl, combine melted butter, brown sugar, cinnamon, and optional nutmeg or cardamom; stir until smooth.
  6. Pour half of the batter into the prepared pan and spread evenly.
  7. Drizzle half of the cinnamon swirl mixture over the batter. Pour remaining batter on top.
  8. Use a butter knife or skewer to gently swirl the cinnamon mixture through the batter.
  9. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  10. Let the bars cool in the pan for about 15 minutes.
  11. Whisk powdered sugar, milk, and vanilla extract to make glaze; drizzle over warm bars.
  12. Slice into bars while warm for gooey texture or wait until fully cooled for cleaner slices.

Notes

Use room temperature eggs and milk for best mixing. Avoid overmixing the batter to keep bars tender. Microwave cinnamon swirl mixture for 10 seconds if too thick to swirl easily. Let bars cool slightly before slicing for cleaner cuts or slice warm for gooey texture. For vegan version, substitute butter with coconut oil and eggs with flax eggs.
