  • 1 bay leaf
  • 2 sprigs fresh thyme or 1/2 teaspoon dried thyme
  • 4 slices baguette, toasted
  • 1 cup shredded Gruyère cheese (about 100 grams)
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Peel and thinly slice 3 medium yellow onions (about 1/8 inch thick).
  2. In a heavy-bottomed saucepan or Dutch oven, melt 2 tablespoons unsalted butter with 1 tablespoon olive oil over medium heat.
  3. Add the sliced onions and cook slowly over medium-low heat, stirring every 5 minutes, for 30-40 minutes until deep golden brown and caramelized. Add a splash of water if onions start sticking.
  4. Stir in 2 minced garlic cloves and cook for 1-2 minutes until fragrant.
  5. Pour in 1/2 cup dry white wine, scraping up browned bits from the pan. Simmer for 3-5 minutes until wine reduces slightly.
  6. Add 3 cups low-sodium beef broth, 1 bay leaf, and 2 sprigs thyme. Bring to a gentle simmer and cook uncovered for 15 minutes. Season with salt and pepper to taste.
  7. While soup simmers, toast 4 baguette slices until crisp and golden.
  8. Remove bay leaf and thyme stems from soup. Divide soup between two oven-safe bowls.
  9. Place a toasted baguette slice on top of each bowl, then pile about 1/2 cup shredded Gruyère cheese over the bread.
  10. Place bowls under the oven broiler for 2-4 minutes until cheese is bubbly and golden brown. Watch closely to avoid burning.
  11. Serve immediately.
