A warm, flavorful crockpot chicken tortilla soup that is easy to prepare and perfect for comfort food moments. Slow-cooked to meld smoky chipotle, fresh lime, and tender chicken with crunchy tortilla toppings.

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 (28 oz) can diced tomatoes with green chilies
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (15 oz) can corn kernels, drained
  • 4 cups low-sodium chicken broth
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 12 chipotle peppers in adobo sauce, minced
  • Juice of 1 lime
  • Salt and pepper, to taste
  • 1 tbsp olive oil (optional, for sautéing onion and garlic)
  • Toppings:
  • Crunchy tortilla strips or crushed tortilla chips
  • Shredded cheddar or Monterey Jack cheese
  • Fresh cilantro leaves, chopped
  • Avocado slices or guacamole
  • Sour cream or Greek yogurt
  • Extra lime wedges for serving

Instructions

  1. Finely chop the onion and mince the garlic (about 5 minutes).
  2. Optional: Heat 1 tbsp olive oil in a skillet over medium heat. Sauté onion and garlic for 3-4 minutes until softened and fragrant.
  3. Place chicken breasts or thighs at the bottom of the crockpot.
  4. Add diced tomatoes with chilies, black beans, corn, and chicken broth to the crockpot.
  5. Add sautéed onion and garlic (or raw if skipping sauté).
  6. Stir in ground cumin, smoked paprika, and minced chipotle peppers. Season with salt and pepper to taste.
  7. Cover and cook on low for 6 hours or high for 3 hours until chicken is tender and shreddable.
  8. Remove chicken and shred with two forks. Return shredded chicken to the crockpot and stir to combine.
  9. Squeeze fresh lime juice into the soup, stir, and adjust seasoning if needed.
  10. Ladle soup into bowls and top with tortilla strips, shredded cheese, cilantro, avocado slices, and sour cream or Greek yogurt.

Notes

Sautéing the onion and garlic before adding to the crockpot adds extra depth of flavor but can be skipped for a quicker prep. Adjust chipotle peppers to control heat level. If soup is too thick, add chicken broth or water before serving; if too thin, cook uncovered on high for 15-20 minutes to reduce. Leftovers taste better the next day as flavors meld.
