A comforting and easy crockpot pot roast recipe featuring tender beef, carrots, and potatoes, perfect for a hearty family meal.

  • 3 to 4 lb beef chuck roast
  • 4 large carrots, peeled and cut into chunks
  • 4 medium potatoes, peeled and quartered
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine (optional)
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Season the beef roast generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat and sear the roast on all sides until browned.
  3. Place the carrots, potatoes, and onion in the bottom of the crockpot.
  4. Add the minced garlic, thyme, rosemary, and bay leaves to the crockpot.
  5. Place the seared roast on top of the vegetables.
  6. In a bowl, mix beef broth, red wine (if using), and tomato paste, then pour over the roast and vegetables.
  7. Cover and cook on low for 8 to 10 hours or on high for 4 to 6 hours, until the meat is tender.
  8. Remove bay leaves before serving. Slice the roast and serve with the cooked vegetables and juices.

Notes

For extra flavor, sear the roast before placing it in the crockpot. Red wine is optional but adds depth to the sauce. Remove bay leaves before serving.
