  • 1/2 cup (120 ml) chicken broth, low sodium preferred
  • 1/2 cup (120 ml) sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste (start with 1/2 teaspoon)
  • Black pepper to taste (start with 1/4 teaspoon)
  • 1 tablespoon olive oil or butter (optional, for searing)

Instructions

  1. Trim any excess fat from pork chops and pat dry with paper towels.
  2. Optional: Heat olive oil or butter in a skillet over medium-high heat. Sear pork chops 2-3 minutes per side until browned. Transfer to crockpot.
  3. In a mixing bowl, combine cream of mushroom soup, sour cream, chicken broth, ranch seasoning, garlic powder, onion powder, salt, and pepper. Stir until smooth.
  4. Pour the sauce evenly over the pork chops in the crockpot, coating well.
  5. Cover and cook on low for 4 to 5 hours until pork chops reach an internal temperature of 145°F and are tender.
  6. If gravy is too thin, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir into crockpot. Cook on high for 10-15 minutes to thicken.
  7. Stir sauce gently before serving. Garnish with fresh parsley or chives if desired. Serve with mashed potatoes or buttered noodles.
