  • Thinly sliced roast beef (deli-style or leftover)
  • Sliced Swiss cheese (Emmental or Gruyère recommended)
  • Baguette or French roll, fresh and crusty
  • 2 cups (16 fl oz) low-sodium beef broth
  • 2 tablespoons unsalted butter, softened
  • 2 cloves garlic, minced
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon onion powder
  • Freshly ground black pepper, to taste
  • Salt, to taste
  • Optional: horseradish sauce for serving

Instructions

  1. In a medium saucepan, melt 2 tablespoons of butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant but not browned.
  2. Add 2 cups beef broth, 1 teaspoon Worcestershire sauce, 1/2 teaspoon onion powder, and freshly ground black pepper to taste. Stir well.
  3. Bring the mixture to a simmer, reduce heat to low, and cook gently for 10-15 minutes to concentrate flavors. Taste and season with salt if needed.
  4. While the au jus simmers, slice the baguette or French rolls in half lengthwise. Warm leftover roast beef slightly in a skillet or microwave for 1-2 minutes.
  5. Place a few slices of Swiss cheese on the bottom half of each sandwich. Layer with warm roast beef so the cheese melts slightly.
  6. Heat a skillet or griddle over medium heat. Butter the outside of the sandwich lightly and place it on the skillet. Press gently with a spatula and toast for 3-4 minutes per side until bread is golden and cheese is melted.
  7. Cut sandwiches in half if desired. Pour warm au jus into small bowls for dipping. Optionally, add a dollop of horseradish sauce on the side.

Notes

Use softened butter spread thinly to avoid greasy spots. Warm roast beef gently to keep it juicy. Toast bread low and slow to melt cheese without burning. Au jus can be made a day ahead for richer flavor. For dairy-free, substitute butter with olive oil and use vegan cheese. Gluten-free rolls and broth can be used for gluten-free version.
