  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 1 cup frozen peas

  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 2 pounds potatoes (Russet or Yukon Gold work best), peeled and cubed
  • 1/4 cup unsalted butter
  • 1/2 cup milk (use whole milk for creaminess or swap with nondairy milk for a dairy-free option)
  • Salt, to taste
  • Optional: 1/4 cup shredded cheese for topping (cheddar or Parmesan)

Instructions

  1. Start by preparing the mashed potatoes. Bring a pot of salted water to a boil and cook the peeled, cubed potatoes until fork-tender, about 15 minutes. Drain and mash them with the butter and milk until smooth. Season with salt to taste and set aside.
  2. Preheat your oven to 375°F (190°C).
  3. In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook for 3-4 minutes until softened.
  4. Add the minced garlic and cook for another 30 seconds, stirring constantly to prevent burning.
  5. Add the ground turkey to the skillet and cook until browned, breaking it up with a wooden spoon as it cooks. This will take about 5-7 minutes.
  6. Stir in the diced carrots, peas, tomato paste, Worcestershire sauce, dried thyme, and chicken broth. Let the mixture simmer for 5-7 minutes, allowing the flavors to meld and the liquid to reduce slightly. Season with salt and pepper to taste.
  7. Transfer the turkey mixture to your baking dish, spreading it out evenly.
  8. Carefully spread the mashed potatoes over the turkey filling, smoothing them out with a spatula. If you’re using cheese, sprinkle it over the top.
  9. Bake the shepherd’s pie in the preheated oven for 25 minutes, or until the top is lightly golden and the filling is bubbling around the edges.
  10. Let it cool for 5-10 minutes before serving. Enjoy!
