  • 4 medium fresh ripe peaches, halved and pitted
  • 3 tablespoons honey (local wildflower honey recommended)
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter, melted
  • 4 scoops vanilla ice cream
  • ½ teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Allow oven to heat for at least 10 minutes.
  2. Wash, halve, and pit 4 medium peaches. Leave skin on for texture or peel if preferred. Place peach halves cut side up in a baking dish, snug but not crowded.
  3. In a small bowl, combine 3 tablespoons honey with ½ teaspoon vanilla extract if using. Stir well.
  4. Brush each peach half with melted unsalted butter using a pastry brush. Then drizzle or brush the honey mixture evenly over the peaches.
  5. Lightly sprinkle 1 teaspoon ground cinnamon over the peach halves, focusing on the cut sides.
  6. Roast peaches in the oven for 20-25 minutes until tender and honey thickens into a glossy syrup. Watch closely during the last 5 minutes to avoid burning.
  7. Remove peaches from oven and let sit for 5 minutes to allow juices to settle and syrup to thicken.
  8. Serve warm peaches with a generous scoop of creamy vanilla ice cream on the side or on top.

Notes

If honey bubbles or darkens too quickly during roasting, reduce oven temperature by 25°F (15°C) or loosely cover peaches with foil. Let peaches rest after roasting to thicken syrup. Frozen peaches can be used if thawed and patted dry. For vegan/dairy-free, substitute honey with maple syrup and use dairy-free vanilla ice cream.
