A warm, comforting Italian soup featuring delicate pastina pasta, savory chicken broth, and fresh herbs—perfect for chilly days or when you need a little TLC.

Ingredients

Scale
  • 1 cup pastina
  • 4 cups chicken broth (low-sodium preferred)
  • 2 tablespoons unsalted butter
  • 2 garlic cloves, minced
  • 1 large egg, whisked
  • 1/4 cup freshly grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Mince the garlic finely, chop the parsley, and grate the Parmesan cheese.
  2. In a medium pot, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.
  3. Pour in the chicken broth and bring it to a gentle boil. Reduce the heat to medium-low.
  4. Stir in the pastina and cook for 5-7 minutes, or until tender. Stir occasionally to prevent sticking.
  5. In a small bowl, whisk the egg until smooth. Slowly drizzle the egg into the soup while whisking the broth to create delicate ribbons of egg.
  6. Add the grated Parmesan cheese, salt, and pepper to taste. Stir in the chopped parsley for a burst of freshness.
  7. Ladle the soup into bowls and serve hot. Garnish with extra Parmesan or a drizzle of olive oil if desired.

Notes

Keep an eye on the pastina to avoid overcooking. Add a splash of lemon juice for a bright flavor. If the soup thickens too much, add a bit of broth or water to adjust consistency.
