  • 1/2 cup unsalted butter (115g), melted and cooled
  • 3/4 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • For the streusel topping:
  • 1/2 cup all-purpose flour (60g)
  • 1/4 cup packed brown sugar
  • 1/4 cup unsalted butter, cold and cut into small cubes
  • 1/2 cup chopped pecans or walnuts (optional)
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Prepare the streusel topping by combining 1/2 cup flour, 1/4 cup brown sugar, 1/2 teaspoon cinnamon, and chopped nuts if using in a small bowl. Add cold butter cubes and mix with fingers or a pastry cutter until coarse crumbs form. Refrigerate while preparing batter.
  3. In a medium bowl, whisk together 2 cups flour, baking soda, baking powder, salt, and cinnamon.
  4. In a large bowl, mash bananas thoroughly. Add peanut butter and melted butter, stirring until smooth. Whisk in brown sugar, granulated sugar, eggs, and vanilla extract until fully combined and glossy.
  5. Gradually fold dry ingredients into wet ingredients gently with a spatula until no streaks of flour remain. Avoid overmixing.
  6. Pour batter into prepared loaf pan and smooth the top.
  7. Sprinkle chilled streusel topping evenly over the batter without pressing down.
  8. Bake for 50-55 minutes or until a toothpick inserted near the center comes out clean or with a few moist crumbs.
  9. Cool bread in the pan for 10 minutes, then transfer to a cooling rack to cool completely.
