  • 3 cups (360g) powdered sugar, sifted

  • ¼ teaspoon peppermint extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, and salt. Set aside.
  3. In a large bowl, beat softened butter and granulated sugar with an electric mixer until light and fluffy, about 3 to 4 minutes.
  4. Beat in the egg, vanilla extract, and peppermint extract until combined.
  5. Gradually add the flour mixture to the wet ingredients, mixing on low speed until just combined. Avoid overmixing.
  6. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing about 2 inches apart. Flatten slightly if desired.

  8. Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  9. In a medium bowl, beat cream cheese and softened butter until smooth and creamy.
  10. Gradually add powdered sugar, beating until fluffy.
  11. Mix in vanilla extract, peppermint extract, and a pinch of salt. Adjust peppermint to taste.
  12. Once cookies are completely cool, spread or pipe the cream cheese frosting over each cookie.
  13. Sprinkle crushed peppermint candies or colored sugar on top if desired.
