  • ½ cup (115g) unsalted butter, melted and cooled
  • 2 large eggs, room temperature
  • 1 cup (240g) pure pumpkin puree (100% pumpkin, not pie filling)
  • 1 tsp vanilla extract
  • ½ cup (120ml) buttermilk (or milk + 1 tsp lemon juice)
  • 6 tbsp (85g) unsalted butter for streusel
  • ⅓ cup (65g) packed brown sugar for streusel
  • ½ cup (65g) all-purpose flour for streusel
  • 1 tsp ground cinnamon for streusel
  • ⅓ cup (40g) chopped pecans or walnuts (optional) for streusel

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×9 inch baking pan and line with parchment paper.
  2. Make the streusel: Melt 6 tbsp unsalted butter in a small saucepan over medium heat, swirling until foamy and golden brown with a nutty aroma. Remove from heat and let cool slightly.
  3. In a bowl, mix ⅓ cup brown sugar, ½ cup flour, 1 tsp cinnamon, and ⅓ cup chopped nuts (if using). Pour browned butter over and stir until crumbly. Set aside.
  4. In a large bowl, whisk together 2 cups flour, baking powder, baking soda, 1 tsp cinnamon, nutmeg, and salt.
  5. In another bowl, whisk granulated sugar, brown sugar, melted butter, eggs, pumpkin puree, vanilla extract, and buttermilk until smooth.
  6. Fold dry ingredients into wet ingredients gently until just combined.
  7. Pour half the batter into the prepared pan and smooth the surface. Sprinkle half the streusel evenly over the batter.
  8. Add remaining batter on top, spreading carefully. Finish by sprinkling remaining streusel on top.
  9. Bake for 40-45 minutes, checking at 38 minutes with a toothpick; it should come out with a few moist crumbs but no raw batter.
  10. Cool in the pan on a wire rack for at least 20 minutes before slicing. Serve warm or at room temperature.

Watch the brown butter closely to avoid burning; swirl the pan gently and remove from heat once it foams and turns golden brown with a nutty aroma. Be gentle when folding wet and dry ingredients to avoid toughening the cake. Let ingredients come to room temperature before mixing for best results.
