A warm, comforting casserole that reinterprets the classic Reuben sandwich flavors into a layered dish with corned beef, sauerkraut, Swiss cheese, and a crispy cheesy topping. Perfect for busy evenings or cozy dinners.

  • 6 cups rye bread, cut into 1-inch cubes (ideally a day or two old for better texture)
  • 12 ounces corned beef, thinly sliced or chopped
  • 2 cups sauerkraut, drained well
  • 2 cups shredded Swiss cheese (Emmental works great)
  • ½ cup mayonnaise (full-fat for richness)
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon Worcestershire sauce (optional)
  • 1 cup shredded Swiss cheese (for melting and crisping)
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a small bowl, whisk together mayonnaise, Dijon mustard, honey, and Worcestershire sauce until smooth and creamy. Set aside.
  3. In a 9×13-inch baking dish, spread half of the bread cubes evenly. Top with half the corned beef, then half the sauerkraut, and sprinkle with one cup of shredded Swiss cheese. Drizzle half the dressing over this layer.
  4. Repeat the layering with the remaining bread cubes, corned beef, sauerkraut, and cheese. Drizzle the rest of the dressing evenly over the top. Press down gently to compact layers slightly but don’t mash.
  5. In a small bowl, combine shredded Swiss cheese, grated Parmesan, and melted butter. Sprinkle this mixture evenly over the top of the casserole.
  6. Bake uncovered for 35–40 minutes until bubbly and golden-brown on top. If the topping browns too quickly, loosely tent with foil for the last 10 minutes.
  7. Rest for 10 minutes before serving to allow the casserole to set and flavors to meld.

Notes

For gluten-free, substitute rye bread with gluten-free bread. For dairy-free, use vegan mayo and dairy-free cheese but topping may not crisp as well. Drain sauerkraut well to avoid sogginess. Freshly shred cheese for best crispy topping. Prepare casserole ahead and refrigerate before baking to deepen flavor; add 5 extra minutes to bake time if baking cold.
