A simple and comforting slow cooker side dish featuring tender carrots glazed with honey, brown sugar, and fresh ginger for a sweet and gently spicy flavor.

  • 2 pounds (900 grams) carrots, peeled and cut into 2-inch pieces
  • 1/4 cup (85 grams) honey
  • 1/4 cup (50 grams) packed brown sugar
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons (28 grams) unsalted butter, melted
  • 1/2 teaspoon salt
  • Freshly ground black pepper, to taste
  • 1/4 cup (60 ml) water
  • Optional: chopped fresh parsley for garnish
  • Optional: 1 teaspoon lemon zest

Instructions

  1. Peel about 2 pounds (900 grams) of carrots and cut them into roughly 2-inch pieces, keeping pieces uniform for even cooking. This should take about 10 minutes.
  2. In a mixing bowl, whisk together 1/4 cup (85 grams) honey, 1/4 cup (50 grams) packed brown sugar, 2 tablespoons (28 grams) melted unsalted butter, 1 tablespoon grated fresh ginger, 1/2 teaspoon salt, and a few grinds of black pepper. Add 1/4 cup (60 ml) water to loosen the mixture slightly until smooth and pourable but not watery.
  3. Add the carrot pieces to the bowl and stir until every piece is coated well with the honey-brown sugar glaze.
  4. Pour the glazed carrots and all the syrupy mixture into your slow cooker, spreading them out evenly.
  5. Set the slow cooker on LOW and cook for 3 to 4 hours. Check tenderness at 3 hours by piercing a carrot with a fork; carrots should be soft but still hold their shape. If needed, cook for another 30 minutes and check again.
  6. Once tender, remove the lid and switch the slow cooker to HIGH for 15-20 minutes to thicken the glaze, stirring occasionally to prevent burning.
  7. Transfer the carrots to a serving dish and garnish with chopped fresh parsley or lemon zest if desired. Serve warm.

Notes

If the glaze becomes too thick or sticky, stir in a tablespoon of water to loosen it before serving. Stir the carrots gently after thickening the glaze to avoid scorching. For a dairy-free version, substitute butter with coconut oil or plant-based margarine. Baby carrots can be used but reduce cooking time by about 30 minutes. Avoid lifting the slow cooker lid frequently to maintain cooking temperature.
