  • 100g (3.5 oz) active sourdough starter
  • 200g (7 oz) pumpkin puree (canned or homemade, pure pumpkin not pie filling)
  • 350g (2 ¾ cups) all-purpose flour (can substitute half with whole wheat flour)
  • 100g (½ cup packed) brown sugar
  • Zest of one medium orange
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp salt
  • 1 tsp baking soda
  • 1 large egg, room temperature
  • 80ml (⅓ cup) vegetable oil
  • 50g (¼ cup) pepitas (pumpkin seeds), toasted
  • 1 tsp vanilla extract

Instructions

  1. Activate your sourdough starter 4-6 hours before baking until bubbly and doubled in size. Use 100g (3.5 oz) for this recipe.
  2. Preheat oven to 350°F (175°C). Lightly grease a 9×5 inch (23×13 cm) loaf pan or line with parchment paper.
  3. In a large bowl, whisk together flour, brown sugar, baking soda, salt, cinnamon, and nutmeg.
  4. In another bowl, stir pumpkin puree, egg, vegetable oil, vanilla extract, and orange zest until smooth.
  5. Add the sourdough starter to the wet ingredients and mix gently until incorporated.
  6. Pour wet ingredients into dry ingredients and fold gently with a spatula until just combined; batter should be thick but spreadable.
  7. Spoon batter into prepared loaf pan and smooth the top. Sprinkle toasted pepitas evenly over the surface.
  8. Bake for 50-60 minutes, checking doneness with a toothpick which should come out mostly clean with a few moist crumbs.
  9. Let bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Use an active sourdough starter at its peak for best rise and flavor. Do not overmix the batter to avoid toughness. Toast pepitas lightly before sprinkling to enhance flavor. Tent with foil if top browns too quickly. Let bread cool completely before slicing to prevent gummy texture. For vegan option, replace egg with flax egg and use coconut oil. Fresh orange zest is preferred over dried.
