  • 8 cups (1.9 liters) apple cider or apple juice
  • 3 cinnamon sticks
  • 68 whole cloves
  • 2 pieces star anise (optional)
  • 1 large orange, sliced into rounds
  • 1 small lemon, sliced (optional)
  • 1/4 cup (50g) brown sugar or maple syrup
  • 1 teaspoon vanilla extract
  • 2 cups (475ml) water

Instructions

  1. Measure out 8 cups (1.9 liters) of apple cider or juice, and prep your spices and citrus slices (about 5 minutes).
  2. Pour the cider and 2 cups (475ml) of water into a large pot. Add 3 cinnamon sticks, 6-8 whole cloves, and 2 star anise pieces if using. Stir gently.
  3. Add the orange and lemon slices, then stir in 1/4 cup (50g) brown sugar or maple syrup.
  4. Bring the mixture to a low boil over medium heat, then reduce to a simmer. Let it simmer gently for 20-25 minutes, uncovered.
  5. Remove the pot from heat and stir in 1 teaspoon vanilla extract.
  6. Use a slotted spoon or fine mesh strainer to remove the spices and citrus slices.
  7. Pour the warm cider into mugs, garnish with a cinnamon stick or an orange slice if desired, and enjoy warm.

Notes

Use whole spices for best flavor and easier straining. Simmer gently to avoid bitterness. Add vanilla extract off heat for a smooth finish. Adjust sweetness and water to taste. For a grown-up version, add bourbon or rum to each mug. Store refrigerated up to 4 days and reheat gently.
