A creamy, fruity French toast casserole layered with cream cheese and bursting with fresh blueberries, perfect for cozy breakfasts and special occasions.

Ingredients

Scale
  • 8 cups thick-cut brioche or challah, cubed (day-old bread works best for soaking)
  • 8 ounces cream cheese, softened
  • 1 ½ cups fresh or frozen blueberries
  • 6 large eggs, room temperature
  • 2 cups whole milk (or almond milk for dairy-free option)
  • ½ cup heavy cream
  • ⅓ cup granulated sugar
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon fine sea salt
  • Butter for greasing the baking dish (unsalted preferred)
  • Optional toppings: maple syrup, powdered sugar, toasted almonds

Instructions

  1. Butter your baking dish generously to prevent sticking. Spread half of the cubed bread evenly in the dish.
  2. Using a spatula or butter knife, dollop spoonfuls of softened cream cheese over the bread layer and gently spread to cover without mashing.
  3. Sprinkle about half of the blueberries evenly over the cream cheese layer.
  4. Add the rest of the bread cubes on top, then sprinkle the remaining blueberries.
  5. In a large bowl, whisk together eggs, whole milk, heavy cream, granulated sugar, vanilla extract, cinnamon, and salt until smooth and slightly frothy.
  6. Slowly pour the custard evenly over the layered bread and blueberries, ensuring all pieces are soaked.
  7. Press down lightly on the bread with a spatula to help absorb the custard without making it soggy.
  8. Cover the dish with plastic wrap and refrigerate for at least 2 hours or overnight for best results.
  9. Preheat oven to 350°F (175°C). Remove plastic wrap and bake uncovered for 45-50 minutes until top is golden brown and custard is set. A toothpick inserted should come out clean.
  10. Let the casserole rest for about 10 minutes before slicing and serving.

Notes

Use day-old bread for better soaking without mushiness. Soften cream cheese well before spreading. Do not skip the soak time; overnight soaking yields the creamiest texture. Tent with foil if top browns too quickly. Frozen blueberries can be used without thawing to prevent color bleeding.
