A creamy, cheesy buffalo chicken dip with a perfect balance of heat and richness, ideal for game day or casual snacking.

Ingredients

Scale
  • 2 cups shredded cooked chicken (about 300 grams)
  • 8 oz cream cheese, softened (225 grams)
  • 1/2 cup buffalo sauce (120 ml)
  • 1 cup shredded sharp cheddar cheese (100 grams)
  • 1 cup shredded mozzarella cheese (100 grams)
  • 1/2 cup sour cream (120 grams)
  • 1/4 cup mayonnaise (60 grams)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • Optional garnish: chopped green onions or fresh parsley

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Shred the chicken finely if using leftover or rotisserie chicken.
  3. Soften the cream cheese by letting it sit at room temperature for about 30 minutes.
  4. In a mixing bowl, combine softened cream cheese, sour cream, mayonnaise, buffalo sauce, garlic powder, onion powder, salt, and pepper. Mix well until smooth and homogenous.
  5. Fold in the shredded chicken carefully to distribute evenly.
  6. Add shredded cheddar and mozzarella cheeses, reserving about 1/4 cup of each for topping. Mix the rest into the dip.
  7. Transfer the mixture to a prepared 8×8 inch baking dish and spread evenly.
  8. Top with the reserved cheddar and mozzarella cheeses.
  9. Bake uncovered for 20-25 minutes until hot, bubbly, and cheese is lightly golden.
  10. Remove from oven and let cool for 5 minutes before serving.

Notes

Softening the cream cheese is essential to avoid lumps. Use freshly shredded cheeses for best melt and texture. Adjust buffalo sauce to taste for desired heat level. For a dairy-free version, substitute sour cream and cream cheese with dairy-free alternatives. Can be made in a slow cooker on low for 2 hours. Avoid overbaking to prevent dryness.
