  • For the Fluffy Mint Filling:
  • 1/2 cup (115g) unsalted butter, softened
  • 2 cups (240g) powdered sugar, sifted
  • 1 1/2 teaspoons peppermint extract
  • 2 tablespoons heavy cream or milk
  • A few drops of green food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.
  2. Cream the butter and sugars: In a large bowl, beat 1 cup softened butter with granulated and brown sugars until light and fluffy—about 3 to 5 minutes using an electric mixer on medium speed.
  3. Add eggs and vanilla: Crack in the eggs, one at a time, beating well after each addition. Stir in vanilla and peppermint extracts.
  4. Combine dry ingredients: In a separate bowl, sift together the flour, cocoa powder, baking soda, and salt.
  5. Mix wet and dry: Gradually add dry ingredients into the wet mixture, mixing on low speed just until combined.
  6. Shape the cookies: Scoop tablespoon-sized portions of dough onto prepared baking sheets, spacing about 2 inches apart.
  7. Bake for 10-12 minutes until edges are set but centers still soft. Let cookies cool on the sheet for 5 minutes before moving to a wire rack to cool completely.
  8. Prepare the mint filling: Beat 1/2 cup softened butter with powdered sugar until creamy. Add peppermint extract and 2 tablespoons cream, then whip on high for 2-3 minutes until fluffy. Stir in green food coloring if using.
