These creamy coconut bars feature a flaky, buttery crust and a sweet, tropical coconut filling, making them the perfect dessert for any occasion.

Ingredients

Scale
  • 1 cup (120g) all-purpose flour
  • 1/2 cup (113g) unsalted butter, softened
  • 1/4 cup (50g) granulated sugar
  • 1/4 teaspoon salt
  • 1 cup (240ml) sweetened condensed milk
  • 1 cup (80g) shredded coconut
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup (30g) all-purpose flour
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or grease it lightly with butter.
  2. In a medium bowl, mix together the flour, sugar, and salt. Add the softened butter and combine until the mixture becomes crumbly. Press the dough evenly into the bottom of the prepared pan to create a flat layer.
  3. Bake the crust in the preheated oven for 10-12 minutes, or until it turns lightly golden. Remove from the oven and let it cool slightly.
  4. In a large bowl, whisk together the eggs, sweetened condensed milk, vanilla extract, and salt. Stir in the shredded coconut and flour until evenly distributed.
  5. Pour the coconut filling over the baked crust, spreading it out evenly with a spatula.
  6. Return the pan to the oven and bake for 20-25 minutes, or until the filling is set and lightly golden on top.
  7. Allow the bars to cool completely in the pan before slicing them into squares.

Notes

[‘Cool completely before slicing to ensure the filling sets properly.’, ‘Use unsweetened coconut for less sweetness or sweetened coconut for a sweeter flavor.’, ‘Add toppings like nuts, chocolate chips, or sea salt for extra flavor and texture.’, ‘Parchment paper makes removing the bars easier and keeps the crust intact.’]
