Creamy Doritos Chicken Casserole

A cheesy, creamy, crunchy casserole that’s perfect for family dinners, potlucks, or cozy nights in. Easy to make and customizable for any occasion.

  • 3 cups cooked chicken, shredded or diced
  • 1 bag (11-12 ounces) nacho cheese Doritos, crushed
  • 2 cans (10.5 ounces each) cream of chicken soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 can (10 ounces) Rotel diced tomatoes and green chilies, drained
  • 1 medium onion, finely chopped
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • Green onions, sliced (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 baking dish lightly with cooking spray or oil.
  2. If using raw chicken, cook and shred or dice it. Rotisserie chicken can be used as a shortcut.
  3. Place the Doritos in a resealable bag and crush them into smaller pieces.
  4. In a large mixing bowl, combine cooked chicken, cream of chicken soup, sour cream, shredded cheddar cheese, Rotel tomatoes, garlic powder, and black pepper. Stir until well combined.
  5. Spread half of the crushed Doritos evenly across the bottom of the prepared baking dish.
  6. Pour the chicken mixture on top of the Doritos and spread it out evenly.
  7. Sprinkle the remaining crushed Doritos over the chicken mixture.
  8. Cover the dish with aluminum foil and bake for 20 minutes.
  9. Remove the foil and bake for an additional 10 minutes, or until the top is golden brown and the cheese is bubbly.
  10. Let the casserole cool for 5 minutes, garnish with sliced green onions, and serve warm.

Notes

For extra cheesy topping, add shredded cheese during the last 5 minutes of baking. Use foil to prevent over-browning. Customize with different Doritos flavors or substitute ingredients for dietary needs.
