Instructions

  1. Peel the bananas and cut each in half crosswise. Insert a popsicle stick firmly into each banana half. Place them on a parchment-lined baking sheet and freeze for about 1 hour.
  2. In a microwave-safe bowl or double boiler, melt the chocolate chips with the coconut oil. Stir every 30 seconds until smooth. Add vanilla extract and a pinch of salt, stirring to combine.
  3. Remove bananas from the freezer. Dip each banana half into the melted chocolate, using a spoon to help coat evenly. Let excess chocolate drip off before placing the pops back on the parchment paper. Freeze for 10 minutes to set the first chocolate layer.

  5. Return the banana pops to the freezer for at least 2 hours or until fully firm.
