A creamy, low-carb, and easy slow cooker chicken recipe with just five ingredients that delivers rich flavor and tender chicken perfect for keto diets.

Ingredients

Scale
  • 2 pounds boneless, skinless chicken breasts or thighs
  • 8 ounces cream cheese, softened
  • 6 slices bacon, cooked and crumbled
  • 1 packet (about 1 tablespoon) ranch seasoning mix
  • 1 cup shredded cheddar cheese

Instructions

  1. Cook the 6 slices of bacon in a skillet over medium heat until crispy, about 8-10 minutes. Transfer to paper towels to drain, then crumble into small pieces.
  2. In a medium bowl, combine the softened cream cheese with ranch seasoning. Stir until smooth and well blended.
  3. Place the chicken breasts or thighs flat in the bottom of the slow cooker.
  4. Dollop the cream cheese and ranch mixture evenly over the chicken pieces and gently spread it around.
  5. Cover and cook on low for 4-6 hours or on high for 2-3 hours until chicken reaches 165°F and is tender enough to shred.
  6. Shred the chicken directly in the crockpot using two forks and mix thoroughly with the creamy sauce.
  7. Sprinkle shredded cheddar cheese over the shredded chicken and sauce, then fold in the crumbled bacon pieces.
  8. Cover and cook for an additional 10-15 minutes until the cheese melts and everything is heated through.
  9. Garnish with chopped green onions or fresh parsley if desired and serve hot.

Notes

Soften cream cheese before mixing to avoid lumps. Use chicken thighs for juicier results. Cook bacon separately to keep it crispy. If sauce is too thick after shredding, add a splash of chicken broth or heavy cream. Adjust seasoning to taste after shredding. Can be adapted for Instant Pot cooking.
