A quick and easy creamy chicken dish with sun-dried tomatoes, garlic, and a velvety parmesan sauce that’s perfect for weeknight dinners or casual get-togethers.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680 g)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1/2 cup chopped sun-dried tomatoes (about 80 g), preferably packed in oil
  • 1 cup heavy cream (240 ml)
  • 1/2 cup chicken broth (120 ml), homemade or low sodium
  • 1/3 cup freshly grated parmesan cheese (about 30 g)
  • 1 teaspoon Italian seasoning (blend of dried basil, oregano, and thyme)
  • 1/4 teaspoon red pepper flakes (optional)
  • A handful of fresh basil or parsley, chopped for garnish

Instructions

  1. Pat the 4 chicken breasts dry with paper towels. Season generously on both sides with salt and pepper.
  2. Heat 2 tablespoons olive oil over medium-high heat in a large skillet until shimmering, about 2 minutes.
  3. Place chicken breasts in the pan without crowding. Cook for about 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F / 74°C). Do not move them too soon to allow a crust to form.
  4. Transfer cooked chicken to a plate and tent with foil to rest.
  5. Reduce heat to medium. In the same pan, add 2 tablespoons butter and minced garlic. Sauté for about 30 seconds until fragrant, being careful not to burn.
  6. Add 1/2 cup chopped sun-dried tomatoes and cook for 1-2 minutes to soften.
  7. Pour in 1/2 cup chicken broth, scraping up any browned bits from the pan. Let simmer for 2 minutes to reduce slightly.
  8. Stir in 1 cup heavy cream, 1/3 cup grated parmesan, 1 teaspoon Italian seasoning, and optional red pepper flakes. Simmer gently for 3-4 minutes until the sauce thickens and coats the back of a spoon.
  9. Nestle the chicken breasts back into the sauce. Spoon sauce over the top and simmer for 2-3 minutes to meld flavors and reheat chicken without drying it out.
  10. Sprinkle chopped fresh basil or parsley over the top and serve immediately.

Notes

If the sauce is too thick, add a splash of broth or cream to loosen it. Avoid boiling the sauce vigorously to prevent curdling. Let the chicken rest after searing to keep it juicy. Use medium-high heat for a good sear. Garlic should be watched closely to avoid burning. This recipe can be made dairy-free by substituting heavy cream with full-fat coconut milk and parmesan with nutritional yeast or dairy-free cheese.
