  • 2 cups (480 ml) vanilla ice cream
  • 3 oz (90 ml) Bailey’s Irish Cream
  • 1/2 cup (120 ml) whole milk
  • 1012 fresh mint leaves
  • 1 cup (240 ml) crushed ice (optional)
  • Optional garnish: whipped cream, mint sprig, chocolate syrup

Instructions

  1. Rinse 10-12 fresh mint leaves under cold water and pat dry. Set aside.
  2. Let 2 cups (480 ml) of vanilla ice cream sit at room temperature for about 5 minutes to soften slightly.
  3. Add softened ice cream, 3 oz (90 ml) Bailey’s Irish Cream, 1/2 cup (120 ml) whole milk, fresh mint leaves, and 1 cup (240 ml) crushed ice (if using) into a blender.
  4. Secure the lid and pulse on medium-high speed for 30-45 seconds until smooth and creamy. Stop and scrape down the sides if needed.
  5. Check consistency: if too thick, add about 1 tbsp (15 ml) more milk and blend briefly; if too thin, add a little more ice cream and pulse again.
  6. Pour into tall glasses and serve immediately. Top with whipped cream and a mint sprig if desired.

Notes

Use fresh mint leaves for best flavor. Soften ice cream slightly before blending to avoid overworking the blender. Pulse blend to avoid warming the shake or making the mint bitter. Crushed ice blends better than large cubes. Variations include dairy-free options and adding chocolate syrup or peppermint schnapps.
