  • pounds boneless, skinless chicken breasts
  • ½ cup sun-dried tomatoes, preferably packed in oil, drained and chopped
  • 3 cloves garlic, minced
  • 3 cups fresh baby spinach (about 90g)
  • ¾ cup heavy cream (180ml)
  • ½ cup low-sodium chicken broth (120ml)
  • ½ cup freshly grated Parmesan cheese (50g)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme blend)
  • Salt and pepper to taste

Instructions

  1. Pat chicken breasts dry with paper towels. Season generously with salt, pepper, and dried Italian herbs on both sides. Let sit while prepping other ingredients.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook 4-5 minutes per side until golden brown but not fully cooked. Remove and set aside.
  3. Reduce heat to medium. Add minced garlic and chopped sun-dried tomatoes to the skillet. Cook 1-2 minutes until fragrant, stirring often.
  4. Pour in chicken broth and scrape up browned bits from the pan.
  5. Stir in heavy cream and grated Parmesan cheese. Simmer gently for 3-4 minutes until sauce thickens slightly. Add more broth if sauce is too thick.
  6. Return chicken to the skillet and nestle into the sauce. Scatter fresh baby spinach over the top. Cover and cook on low heat for 5-7 minutes until chicken is cooked through (internal temp 165°F) and spinach is wilted.
  7. Taste and adjust seasoning with salt and pepper. Optionally, add a squeeze of fresh lemon juice for brightness.
  8. Serve warm, spooning creamy Tuscan chicken and sauce onto plates. Pairs well with crusty bread or creamy mashed potatoes.

Notes

Pat chicken dry and avoid overcrowding the pan to get a golden crust. Keep heat moderate when adding cream to prevent curdling. Add spinach last to keep it vibrant and fresh. Let chicken rest a few minutes before serving to keep it juicy. For dairy-free, substitute heavy cream with coconut cream and use dairy-free Parmesan. For low-carb, serve over cauliflower rice.
