Creamy One-Pot Tuscan Chicken with Spinach

A quick and easy one-pot creamy Tuscan chicken dish with tender chicken breasts, garlicky spinach, and tangy sun-dried tomatoes simmered in a rich, silky sauce.

  • 1.5 lbs boneless skinless chicken breasts
  • 2 tbsp extra virgin olive oil
  • 4 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped (preferably packed in oil)
  • 4 cups baby spinach (about 120 g)
  • 1 cup heavy cream (240 ml)
  • 3 oz cream cheese, softened (85 g)
  • ¾ cup chicken broth (180 ml)
  • ½ cup grated Parmesan cheese (50 g)
  • 1 tsp dried Italian seasoning (oregano, basil, thyme blend)
  • Salt and black pepper, to taste
  • ¼ tsp red pepper flakes (optional)

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides generously with salt, pepper, and dried Italian seasoning. Set aside. (5 minutes)
  2. Heat olive oil over medium-high heat in a large deep skillet. Add chicken breasts and cook without moving for 4-5 minutes per side until golden brown and almost cooked through. Remove chicken and set aside. (10 minutes)
  3. Lower heat to medium. Add minced garlic and chopped sun-dried tomatoes to the pan. Stir frequently for 1-2 minutes until fragrant, being careful not to burn the garlic. (2 minutes)
  4. Pour in chicken broth, scraping up browned bits from the pan. Add heavy cream and cream cheese in chunks. Stir gently until cream cheese melts and sauce is smooth and creamy. (5 minutes)
  5. Return chicken breasts to the skillet, nestling them into the sauce. Cover with lid and simmer on low heat for 8-10 minutes until chicken is cooked through (internal temperature 165°F / 74°C). (10 minutes)
  6. Remove lid, stir in baby spinach and grated Parmesan cheese. Cook uncovered for 2-3 minutes until spinach wilts and sauce thickens slightly. Adjust salt and pepper to taste. (5 minutes)
  7. Sprinkle with optional red pepper flakes if desired. Let dish rest off heat for 2 minutes before serving to allow sauce to settle. (2 minutes)

Notes

If sauce is too thick, stir in a splash more chicken broth or cream. If too thin, simmer uncovered to reduce. Let chicken rest in sauce off heat to keep it juicy. For dairy-free version, substitute heavy cream and cream cheese with coconut cream and dairy-free cream cheese alternative. Spinach can be swapped with kale or Swiss chard. Red pepper flakes add optional heat.
