  • 1 teaspoon (7g) honey or maple syrup (optional)
  • 1 tablespoon (12g) chia seeds
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Mash 1 ripe banana in a mixing bowl with a fork until mostly smooth but still a bit chunky (about 1-2 minutes).
  2. Stir in 2 tablespoons of creamy peanut butter until well combined into a paste-like consistency.
  3. Pour in 1/2 cup milk, 1/4 cup Greek yogurt, and 1/2 teaspoon vanilla extract; whisk until smooth and creamy.
  4. Add 1/2 cup rolled oats, 1 tablespoon chia seeds, 1/4 teaspoon ground cinnamon, a pinch of salt, and 1 teaspoon honey or maple syrup if using; mix thoroughly.
  5. Transfer the mixture into a jar or airtight container, seal tightly, and refrigerate for at least 6 hours or overnight.
  6. In the morning, stir the oats gently; add a splash of milk if too thick. Adjust sweetness if needed and top with sliced bananas, a drizzle of peanut butter, or crunchy toppings as desired.

Notes

Use rolled oats for best texture; chia seeds help thicken the mixture. For vegan version, substitute dairy milk and yogurt with plant-based alternatives and use maple syrup instead of honey. Stir once or twice before refrigerating to prevent clumps. Add toppings fresh in the morning to preserve texture.
