  • 1 tablespoon (12g) granulated sugar or maple syrup (adjust to taste)
  • 2 tablespoons (30ml) salted caramel sauce (homemade or store-bought)
  • A pinch of ground cinnamon
  • A small pinch of sea salt for sprinkling

Instructions

  1. Prepare the cold brew: Combine 1 cup (85g) coarsely ground coffee with 4 cups (960ml) cold filtered water in a jar or cold brew maker. Steep overnight (12-16 hours) in the fridge. Strain through a fine mesh or coffee filter.
  2. Mix the pumpkin milk base: In a small bowl, whisk together ½ cup (120ml) milk, 2 tablespoons (30g) pumpkin puree, 1 tablespoon (12g) sugar or maple syrup, ½ teaspoon vanilla extract, and a pinch of cinnamon until smooth and sugar dissolves (about 2 minutes).
  3. Froth the pumpkin milk: Pour the pumpkin milk mixture into a milk frother or tall container. Froth or blend on high speed for 30-45 seconds until thick, creamy foam forms. If using a jar, shake vigorously for 1-2 minutes until dense but light foam forms.
  4. Assemble the drink: Fill a tall glass with 1 cup (240ml) cold brew coffee, leaving room at the top for foam. Slowly spoon or pour the pumpkin cold foam over the coffee to create a thick layer.
  5. Add salted caramel: Drizzle 2 tablespoons (30ml) salted caramel sauce over the foam. Sprinkle a tiny pinch of sea salt on top to balance sweetness.
  6. Serve immediately: Enjoy with a straw or stir gently to combine flavors. Best served fresh to keep foam texture intact.
