Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan with non-stick spray or line with parchment paper.
  2. In a large mixing bowl, combine yellow cake mix, 1 large egg, and 8 tbsp melted butter. Mix until a soft dough forms. If too dry, add 1-2 tbsp milk or water.
  3. Press the dough evenly into the bottom of the prepared pan.
  4. In another bowl, beat softened cream cheese until smooth. Add canned pumpkin, 2 large eggs, and 8 tbsp melted butter; mix until well combined.
  5. Stir in vanilla extract, cinnamon, nutmeg, cloves (if using), and a pinch of salt.
  6. Gradually add powdered sugar, mixing on low speed until the filling is light and fluffy.
  7. Pour the pumpkin filling over the cake base and spread evenly.
  8. Bake for 40-50 minutes, or until edges are golden and set but the center still jiggles slightly.
  9. Let the cake cool in the pan for at least 30 minutes. For cleaner slices, chill in the fridge for 1-2 hours before cutting.
  10. Top with whipped cream, a sprinkle of cinnamon, or chopped pecans before serving if desired.
