  • 1 cup shredded queso blanco cheese (about 100 grams)
  • 1 cup shredded Monterey Jack cheese (about 100 grams)
  • 1 cup whole milk (240 ml)
  • 1 tablespoon unsalted butter
  • 1/2 cup finely diced yellow onion (about 80 grams)
  • 2 cloves garlic, minced
  • 1 small jalapeño, seeded and minced (optional)
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon smoked paprika
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Heat a medium skillet over medium heat. Add the crumbled raw chorizo and cook, stirring occasionally, until browned and cooked through, about 6–8 minutes.
  2. Remove the chorizo with a slotted spoon and set aside, leaving the fat in the pan. Add 1 tablespoon unsalted butter, then the diced onion and minced garlic. Cook until softened and translucent, about 4 minutes. Add the minced jalapeño if using.
  3. Pour 1 cup whole milk into a medium saucepan over low heat. Stir in cumin powder and smoked paprika. Warm gently without boiling to infuse the spices.
  4. Gradually add shredded queso blanco and Monterey Jack cheese to the milk, stirring constantly until melted and smooth. Adjust thickness by adding more milk or cheese as needed.
  5. Stir the sautéed onions, garlic, jalapeño, and cooked chorizo into the cheese sauce. Season with salt and freshly ground pepper to taste.
  6. Keep the dip warm on low heat for an additional 5 minutes, stirring occasionally until creamy and smooth.
  7. Remove from heat and sprinkle chopped fresh cilantro over the top. Serve immediately with tortilla chips, sliced veggies, or warm pita bread.

Notes

If queso thickens too much upon standing, stir in a little warm milk to loosen it before serving again. Keep the dip warm but avoid boiling to prevent cheese separation. For dairy-free or vegetarian versions, substitute cheeses with vegan mozzarella-style shreds and use coconut milk; omit chorizo or replace with turkey chorizo or roasted vegetables.
