  • 2 pounds ripe Roma or plum tomatoes, halved
  • 1 cup loosely packed fresh basil leaves (about 25 g)
  • 4 large garlic cloves, unpeeled
  • 3 tablespoons extra virgin olive oil
  • 3 cups vegetable broth (720 ml)
  • 1 cup heavy cream (240 ml)
  • ½ cup finely grated Parmesan cheese (50 g)
  • Salt and freshly ground black pepper, to taste
  • Pinch of red pepper flakes (optional)
  • ½ teaspoon dried oregano
  • 1 tablespoon butter (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Halve the tomatoes and arrange them cut side up on the baking sheet. Toss with 2 tablespoons olive oil, salt, pepper, and dried oregano. Nestle the unpeeled garlic cloves among the tomatoes.
  3. Roast for 30–35 minutes until tomatoes are soft and caramelized at the edges and garlic is fragrant and tender.
  4. Remove garlic cloves and squeeze the softened garlic out of their skins once cool enough to handle.
  5. Transfer roasted tomatoes, peeled garlic, and any pan juices into a blender or soup pot. Add vegetable broth and basil leaves. Blend until smooth and creamy.
  6. Pour blended mixture into a soup pot (if not already there) and bring to a gentle simmer over medium heat. Stir in heavy cream and butter (if using). Adjust seasoning with salt, pepper, and red pepper flakes. Simmer for 5–10 minutes, stirring occasionally.
  7. Heat a small non-stick skillet over medium heat. Sprinkle grated Parmesan in small rounds or clusters, letting it melt and crisp for 2–3 minutes. Flip carefully and cook until golden and crunchy. Remove and drain on paper towels.
  8. Ladle bisque into bowls and garnish with crispy Parmesan topping and fresh basil leaves.

Notes

Watch tomatoes carefully while roasting to avoid over-charring. If bisque is too thick after blending, add more broth or cream to adjust consistency. Parmesan crisps cook quickly; use medium heat and patience to avoid burning. For dairy-free, substitute heavy cream with coconut or cashew cream and Parmesan with nutritional yeast.
