  • 1 pound medium-sized shrimp, peeled and deveined
  • 4 cups chicken or seafood stock, warmed
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste
  • Optional: Red chili flakes
  • Optional: Lemon zest

Instructions

  1. Warm the stock in a small saucepan over low heat and keep it warm throughout the cooking process.
  2. Heat 1 tablespoon of butter and 1 tablespoon of olive oil in a large skillet over medium heat. Add the shrimp and sauté for 2-3 minutes per side until pink and cooked through. Remove the shrimp from the pan and set aside.
  3. Add another tablespoon of butter to the skillet, followed by the chopped onion and minced garlic. Sauté for 2-3 minutes until softened and fragrant.
  4. Stir in the Arborio rice and cook for 1-2 minutes to toast the grains slightly.
  5. Pour in the white wine and stir until mostly absorbed by the rice.
  6. Begin adding the warm stock one ladleful at a time, stirring constantly. Wait until the stock is absorbed before adding the next ladleful. Repeat for about 20-25 minutes until the rice is tender and creamy.
  7. Once the rice is cooked, stir in the Parmesan cheese and remaining butter. Mix well to create a velvety texture.
  8. Gently fold the cooked shrimp into the risotto, allowing them to warm through.
  9. Season with salt and pepper to taste, then garnish with fresh parsley and optional lemon zest or red chili flakes.

Notes

Use warm stock for even cooking and creamy texture. Toast the rice for enhanced flavor. Avoid overcooking the shrimp to keep them tender.
