  • 3 garlic cloves, minced
  • 6 cups chicken broth (low sodium preferred)
  • 1 cup milk (whole or 2%; can substitute almond or oat milk for dairy-free)
  • 3 tablespoons all-purpose flour (or gluten-free flour blend)
  • 3 tablespoons butter (or dairy-free margarine/olive oil for dairy-free)
  • 1 teaspoon dried thyme
  • 1 tablespoon dried parsley (or fresh herbs)
  • Salt, to taste (start with 1 teaspoon)
  • Black pepper, to taste (start with ½ teaspoon)

Instructions

  1. Dice carrots, celery, and onion into small, uniform ¼-inch pieces. Mince garlic. Cut chicken breasts into 1-inch chunks.
  2. Add chicken, carrots, celery, onion, garlic, dried thyme, parsley, salt, pepper, and wild rice blend to the slow cooker.
  3. Pour in 6 cups of chicken broth, ensuring all ingredients are submerged. Stir gently to combine.
  4. Cover and cook on low for 5 to 6 hours until chicken is tender and wild rice is chewy but cooked.
  5. About 20 minutes before serving, melt butter in a skillet over medium heat. Whisk in flour and cook for 2–3 minutes, stirring constantly to avoid lumps.
  6. Slowly whisk the roux into the slow cooker, then stir in 1 cup of milk. Cover and cook on high for another 15–20 minutes until soup thickens slightly.
  7. Give the soup a final stir. If thicker soup is desired, cook uncovered on high for an additional 10 minutes, stirring occasionally.
  8. Adjust seasoning with salt and pepper as needed before serving.

Notes

Use a wild rice blend for best texture; pure wild rice takes longer and can be tough. Make the roux separately to avoid lumps and ensure a silky texture. Add milk at the end to prevent curdling. If wild rice is not tender enough after cooking, extend slow cooker time by 30 minutes to 1 hour with lid on. For dairy-free, substitute milk with coconut or almond milk and butter with olive oil or dairy-free margarine.
