  • ½ cup (115g) unsalted butter, softened
  • ⅓ cup (65g) granulated sugar
  • 1 large egg, room temperature

  • 16 ounces (450g) cream cheese, softened
  • ½ cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • ½ cup (120ml) sour cream
  • ¼ teaspoon salt
  • ½ cup (120ml) heavy cream, whipped (optional topping)
  • Sprinkles or crushed sugar cookies for garnish (optional)

Instructions

  1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, beat softened butter and ⅓ cup sugar on medium speed until creamy and light, about 2 minutes. Add egg and vanilla extract, mixing until combined.
  4. Gradually add dry ingredients to the wet mixture and mix until dough comes together; it should be soft but not sticky.
  5. Press about two-thirds of the dough evenly into the bottom of the prepared pan. Reserve remaining dough for topping.
  6. In a clean large bowl, beat cream cheese and ½ cup sugar on medium speed until smooth and creamy, about 3 minutes. Scrape down sides as needed.
  7. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract, sour cream, and salt until just combined. Avoid overmixing.
  8. Pour cheesecake filling over the crust in the pan. Crumble reserved sugar cookie dough evenly over the top.
  9. Bake for 50-60 minutes until edges are set but center jiggles slightly when shaken. Tent with foil if browning too quickly.
  10. Let cheesecake cool at room temperature for about 1 hour, then refrigerate for at least 4 hours or overnight to set.
  11. Optional: Before serving, whip heavy cream until stiff peaks form and dollop or pipe on top. Garnish with sprinkles or crushed sugar cookies.

Notes

Use room temperature ingredients for smooth mixing. Avoid overmixing the filling to prevent cracks. A water bath is optional but recommended to prevent cracking. Let cheesecake chill fully for best texture. Cracks can be hidden with whipped cream topping. For gluten-free, substitute flour with gluten-free blend. For dairy-free, use vegan cream cheese and coconut cream.
