Indulgent and comforting, this creamy Tuscan ravioli recipe is packed with flavor from spinach, sun-dried tomatoes, and Parmesan cheese. Ready in just 30 minutes, it’s perfect for weeknights or special occasions.

Ingredients

Scale
  • 1 package ravioli (cheese, spinach, or chicken-filled)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, packed in oil, chopped
  • 2 cups fresh baby spinach
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1 cup chicken broth
  • Salt and pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Cook the ravioli according to the package instructions, usually about 3-4 minutes. Drain and set aside.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the chopped sun-dried tomatoes and cook for another 2 minutes, stirring occasionally.
  4. Pour in the chicken broth and heavy cream, stirring to combine. Let the mixture simmer for 3-5 minutes, allowing it to thicken slightly.
  5. Stir in the grated Parmesan cheese until melted and smooth. If the sauce seems too thick, add a splash of chicken broth to loosen it.
  6. Add the fresh spinach and cook until wilted, about 2 minutes.
  7. Season the sauce with salt, pepper, and red pepper flakes (if using). Taste and adjust seasoning as needed.
  8. Gently toss the cooked ravioli into the skillet, ensuring each piece is coated with the creamy sauce.
  9. Serve immediately, garnished with extra Parmesan and a sprinkle of red pepper flakes if desired.

Notes

[‘Don’t overcook the ravioli to prevent it from becoming mushy.’, ‘Use fresh Parmesan for a smoother sauce.’, ‘Adjust sauce consistency with chicken broth or pasta water.’, ‘Sauté garlic and sun-dried tomatoes first to build depth in the sauce.’, ‘Keep the dish warm by covering the skillet and keeping it on low heat.’]
