Creamy Tuscan Salmon for Two Easy Recipe with Garlic and Spinach

A quick and easy creamy Tuscan salmon recipe for two featuring garlic, spinach, and a luscious Parmesan cream sauce. Perfect for intimate dinners or cozy nights in.

  • 2 (6-ounce / 170g each) skin-on salmon fillets, preferably wild-caught
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 small shallot, finely chopped
  • 3 cups fresh baby spinach, washed and roughly chopped
  • ½ cup (120ml) heavy cream
  • ¼ cup freshly grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme mix)
  • ¼ teaspoon crushed red pepper flakes (optional)
  • 1 tablespoon fresh lemon juice
  • Salt and freshly ground black pepper to taste

Instructions

  1. Pat the salmon fillets dry with paper towels, then season both sides generously with salt and pepper.
  2. Heat 2 tablespoons of olive oil in a 10-inch skillet over medium-high heat until shimmering but not smoking. Carefully place the salmon, skin-side down, in the pan. Press down gently with a spatula to avoid curling. Cook for 4-5 minutes without moving to get a crisp skin.
  3. Flip the salmon and cook the other side for 3-4 minutes until just cooked through but still moist inside. Remove salmon from the pan and set aside on a warm plate.
  4. Lower heat to medium, add minced garlic and shallot to the same pan. Stir frequently, cooking until fragrant and soft, about 1-2 minutes.
  5. Add chopped spinach to the pan and stir until wilted, about 2-3 minutes. If the pan feels dry, splash a little olive oil or water to help it along.
  6. Pour in ½ cup heavy cream and stir to combine with the spinach and garlic mixture. Let it simmer gently for 2-3 minutes until slightly thickened.
  7. Stir in grated Parmesan, dried Italian herbs, red pepper flakes (if using), and lemon juice. Continue stirring until cheese melts and sauce coats the spinach nicely. Taste and adjust seasoning.
  8. Return salmon fillets to the pan nestled into the creamy spinach sauce. Spoon a little sauce over the top and let everything warm together for 1-2 minutes.
  9. Serve immediately with extra lemon wedges if desired.

Notes

If sauce is too thick, add a splash of chicken broth or water to loosen it. If too thin, let it simmer longer. Do not rush the salmon sear to achieve crispy skin. Use coconut cream and nutritional yeast for a dairy-free version. Baking option: bake salmon at 400°F (200°C) for 12-15 minutes and prepare sauce separately.
